The lentil (Lens culinaris or Lens esculenta) is an edible legume. It is a bushy annual plant known for its lens-shaped seeds. I’m in serious weather denial. With what seems like the fourth storm this week to hit California (is Noah building his “arky arky” yet?) I’m still puttering around the house in shorts and flip flops, and dreaming of good times in warmer weather.

But there is only so much denying one can do, before the shivering reality sets in, and then it’s time for stew. Lentil stew in this case.

My friend Clara and I were inspired to make this hearty lentil stew today, in the midst of yet another downpour, based on Clara’s family recipe. It’s made with bacon and sausage, a mirepoix of onions, carrots, and celery, and topped with parsley.

Since the beginning of April, our weekends have been consumed by trips to the Cape. We’re getting close to the end of the major work. The main bathroom has been gutted, which is probably our biggest obstacle at this point. There are a few exterior elements… an outdoor shower that’s being constructed and some painting… that remain. While it feels very fall, this is a year-round dish… and an excellent side for an outdoor feast.  It’s savory and sweet with a hit of acidity from the citrusy dressing. I’ve eaten plenty of it on its own, but it certainly feels like the perfect pairing for a platter of grilled chicken or fish.

Lentils may not be the most attractive foods when cooked, but they do pack a powerful nutritional and delicious wallop. Low in fat and high in protein and fiber, they are a staple of many Asian cuisines.

When I looked them up in my old cookbooks, they often were absent. However, in my newer and more recent cookbooks, they occupy a whole column in the indexes, a gift of the many immigrants and ethnicities that have become a part of our American culture.

I would venture to say that lentils are one of the go-to elements for ethnic as well as vegetarian recipes and are an ideal addition to anyone’s pantry for a quick-cooking, tasty and nourishing dish that welcomes and complements other flavors. From the familiar greenish-tan ones to tiny green Puy lentils to red (actually salmon pink) lentils, with many other varieties along the spectrum, their mild earthy flavor has captured many a palate.
